Spring is here!! Well, ok it’s supposed to be here. But with two sunny days in a row I felt inspired to make this Lemon Meringue Cheesecake and it was so good I have to share with you all! I’m warning you ahead of time that I am NO food blogger! I didn’t intend on sharing this but with so many asking for the link I decided to share it here. So the photos aren’t as pretty or styled as I would like but this recipe is worth it!! I was searching Pinterest (find me HERE) and came across this Lemon Meringue Cheesecake made by Holly from Spend with Pennies. I made this the day of but would recommend making it the day before as it needs quite a bit of time to rest in the fridge. The Graham cracker crumb crust was what sold me on making this recipe as making pie crusts for some reason scares me. So if you have a easy, fool proof pie crust recipe please send it my way!!
